At some level, the Gesher series of books in simple Hebrew provides a reading challenge.

The books are vowelized and in moderate-sized type with some words defined in footnotes.
A lot of them deal with the establishment of Israel and have sentimental value. "Four Stories" by Aharon Meged is a good one, in my opinion.
