There was a very strong Christian Hebraist movement in early modern
Europe--with medieval precendents--that most certainly studied Hebrew texts.

While I don't know about Christian scribes copying Hebrew texts--although I
suspect you are correct--, there was a tradition of copying in the sense of
printing. Many (most?) of the early Hebrew Bibles were printed by Christians.
(This includes standard Bibles, rabbinic Bibles and polyglots, all in the
same century as the Council of Trent you refer to.)
