Exodus 1:15 says explicitly that they were Hebrew midwives -- "Meyaldot
Ivriyot".
I'm curious as to what reasons would there be to call them "Ivriyot" if
they were Egyptians or otherwise not Hebrews, in which case either they
would be called "Mitzriyot" or their "nationality" wouldn't have been
mentioned.
And what would be the reason for the Hebrew women to use non-Hebrew
midwives?
