What was the variety, and how ripe did you let them get? Quince can be very aromatic, but not all varieties are as intense as some like Pineapple, and even the best don't develop full character until they are completely ripe, meaning a deep lemon yellow, in most.

I found a lot of recipes on the net for quince jelly and would like to try some, but can't yet find the flavor I'm looking for.
