I opened a new liter sized jar of a local honey last night and used a little and then recapped it. Next time I looked (a few minutes later), honey was oozing out from under the cap. I uncapped it and there was a "pop" like a champagne bottle being opened. The honey then continued to froth an airy and, I confess, although I shouldn't have tasted it, delicious foam. It kept foaming and foaming with more and more air bubbles descending into the honey in the jar. I recapped it and this morning the foam has risen to the top 2" plus the neck of the bottle and is all clear and beautiful below. What could cause this? Is the honey safe to eat (botulism?)? Thanks!
