Great to have you back in the Mac family :)

First let's start with web browsers.  IMHO get Firefox and be done with it.  I don't even use Safari anymore (why on my next point).

For mail and calender I've mostly switched to services from Google for both.  Can't beat the cross-platform and portability of both being able to access from nearly any platform at both work and home.

That said if you like Outlook you might want to checking into getting MS Office on the Mac.

MS Office, even the student and teacher edition that I'll be using upon my return to night school, contains Entourage, the "Outlook" type e-mail program for Macs from Microsoft.

But that said I'd rather spend the money on iLife and iWork, two great suites of applications from Apple.  Too bad that iWork doesn't have an Excel contender, at least not yet, but rumors abound that it is "just around the corner".  The Apple Word-like program (Pages) is a joy to use as is Presenter, it's power-point equivalent.  But I've said this before, if you are going to create documents on your Mac to share with your Windows friends I'd just as soon get a copy of MS Office.  But that is just me, your mileage may vary (and keep in mind there are ports of OpenOffice to the Mac platform).

Hum, other then that personal favorite applications are iTunes and iPhoto.  And Adobe Photoshop Elements.  Great stuff, really.
