For milk: Nubian; forget the other breeds.
The milk is the most like cow's and has a lot of cream.
It does not have the typical gamey off-flavor of the milk of other breeds, i.e. Toggenburg. Its a hardy breed and easy to manage for milk production.

For wool, Angora. Try certain varieties of sheep for more and better
meat and resistance to internal parasites; there's a specific breed for this, forget the name.
