Sorry this took so long.
I have not been to any of these places, but asked Albert Bates, who teaches
here (here being www.mmrfbz.org, which is in Belize, south of Yucatan) and
spends a lot of time in Yucatan, aboyt permaculture projects in Yucatan.
Let me know if you visit them what you thought. We are looing into visiting
some of them some time this year.
