Justin,
Check out www.umasspermaculture.com. I just heard about this program. They
seem to be mostly a garden to table project for the university food service
using strategies typically employed in permaculture systems, like sheet
mulching and forest gardening. You can find a lot of info online looking for
garden to table projects at colleges. There are many of them in existence.
Most will not use the word "permaculture" in their marketing, and in my
opinion there is really no need to. In a similar sense, if you are looking
for existing programs geared toward educating designers search "ecological
design at colleges" and sort through the results. "Permaculture" as a design
system will likely come into more common use in ENV departments at schools,
but for now you might find better info by excluding it from searches.
Best,
