So ... this is weird .... my geeky life crossing with my permaculture life ...
I worked on the ground systems for the spacecraft that takes those pics.
The thing is that the satellite comes within picture range of an area
about once every 2.5 days (that's an average - it's a lot more
complicated than that). And lots of times there are clouds! And lots
of times, there is more demand for pictures of populated areas so
while the satellite is flying over your farm, it might tilt itself a
bit to take pictures of a city off to the left instead. The result is
that pictures of rural land aren't taken that often.
