Ecological Consciousness: Exploring Our Sense of the Sacred and
Learning to Live Well with the Earth
Thursday, September 6th 7-9pm $30


We will explore the spiritual, ethical and moral aspects of a deep
appreciation for the Earth, and the spiritual relationship between
human beings as biological organisms and their ecological environment,
the Gaia organism. Our ecological crisis is interrelated with our
spiritual crisis and is derived from an absence of a sense of the
sacred and from a lack of awareness of the fact that our own wellbeing
is intrinsically and inseparably interwoven with the well being of the
Earth.
Becoming responsible stewards of the Earth can begin to heal human
communities, spiritually and ecologically. We can create ways to live
with vitality and abundance that cooperate and enhance the health of
the Earth and her ecosystems with ecologically sound, locally adapted,
biologically and community powered infrastructures and educational
models that enhance the evolution of ecological consciousness.

Announcing two new series of workshops offered by Permaculture
designer and educator, Andrew Faust. The first series of workshops,
Food and Vitality, will encompass: local and seasonal foods and their
preparation; extending and over-wintering your backyard or container
garden and growing indoors; fermented foods; making whole grain beers
and herbal tonics; and last but not least, making herbal tincture,
salves and extracts. The second series, Natural Building, will cover
the hows and whys of: *bioregional building, natural building vs.
green building, and straw bale construction for wet and cold climates.




Food and Vitality

Sprouting and Nutrition
Thursday, September 20th 7-9pm $30

In this intro workshop, the broad spectrum of eating
right for your region, season and vitality will be addressed through
the demonstration of how to:
sprout whole grains and beans; grow wheat grass, sunflower, buckwheat
and flax micro greens; culturing raw diary; make sourdough bread; use
slow and low heat cooking methods to preserve vitality. Come and learn
how to live well and in harmony with the earth while boosting immunity
and increasing longevity! Bring a small jar if you would like to take
home some sourdough starter.


Extending and Increasing the Harvest: Over-wintering your outdoor
gardens and containers
Thursday, October 25th 7-9pm $30

This second workshop will cover: which vegetables to stock up on for
the winter months and how to store them by either root cellaring or
fermentation (think: raw apple cider vinegar); extending the homegrown
harvest with mini hoops, cold frames and hoop greenhouses;
over-wintering outdoor containers and raised beds; growing indoors by
potting up summer crops; indoor mushroom patches; and soil building
for the small garden.

Lactoferments
Saturday, November 3rd 3-5pm $40

This third workshop will walk you through making a variety of
lactoferments including: kim chee, sauerkraut, ginger-carrots and
other root lactoferments. Please bring a few 2 qt. glass mason jars, a
good cutting knife, a cutting board and the rest will be supplied.
Handouts of recipes will be provided. IMPORTANT!!! Please register one
week
in advance so we can insure the correct amount of ingredients. This is
sure to fill up fast!

Handcrafting Home Brews
Friday, November 9th 7-9pm $30


This third workshop will cover: malting whole grains for superlative
home brew beers and will include sources for organic whole grains;
preparing herbal tonics and sacred beers with wild dandelion, yarrow,
rosemary and others; culturing wild yeasts. Kombucha preparation will
also be covered and kombucha "mothers" will be given away to make at
home. Handouts of recipes will be provided.

Handcrafting Herbal Tinctures, Salves and Extracts
Wednesday, November 14th 7-9pm $30


For increased vitality and immuno-boosting potency there is nothing
that compares to fresh harvested and properly prepared homegrown herbs
and handmade herbal remedies.
This fourth and final workshop in this series will show you how to
make salves, extracts and tinctures that promote healing through the
gentle nature of herbs. Excellent for gift giving!

Natural Building

Healthy Buildings = Healthy People
Wednesday, November 7th 7-9pm $30

Natural, local and bioregional building creates
ecologically sound local economies and healthy homes.
In the first workshop in this series come learn and discuss how to
create healthy homes by investigating various criteria for analyzing
building materials to determine how ecologically safe and sound they
are. Some topics that will be covered are: passive solar hot water
systems for domestic heating needs; identifying and eliminating
household sources of EMFs and other indoor air pollutants, and more.

Natural Building vs. Green Building
Saturday, November 17th 2-5pm $50

This second workshop will focus on whole systems design for human
dwellings and settlements. Topics covered will be: total embodied
energy of building materials and the distance (i.e. fossil fuel
consumption) they travel; sustainable onsite harvesting and
cultivation of natural building materials (wood, earthen plaster, cob,
bamboo…); managing a wood lot to increase diversity; natural
windbreaks; passive solar design; off-the-grid energy systems; gravity
fed, passive and low energy inputs for water systems; intentional
wetland wastewater treatment; rainwater catchments and rain gardens;
living roofs. This one will fill up fast so register early!

Straw Bale Construction
Wednesday, December 5th 7-9pm $30

This third and final workshop in the Natural Building series will
cover: building with straw bale for wet and cold climates; earthen
plaster interiors, exteriors and finish coats.

*Bioregion – a region whose limits are defined by topographic and
biological features such as mountain
ranges and ecosystems.
