This volume explores all facets of how the nutritional value
of foods is affected by the way they were produced. The
agriculture-nutrition connnection is interpreted broadly,
covering not just biological and chemical factors, but also
consumers' perceptions, marketing channels, and economic
considerations. The concept of "nutritional value" is examined as
part of the more general concept of "food quality." Several
papers discuss the implications for national and international
food and nutrition strategies.
The 21 papers are from an international conference held in
Boston, Massachusetts (USA) in March 1997, organized by the Tufts
University School of Nutrition Science and Policy.
