As far as non-west-coast USA seed sources, I should have mentioned Seed
Savers, which has a huge collection:

Good question about the rest of the country, there are some good
gardening-style seed companies (Johnny's, Sheperd's, Cook's) in the East
but I don't know of places with the varieties of unusual veggies, legumes
etc as seem to accumulate on the West coast.
