Jim,It seems to vary with variety and duration. Some are damaged at 31, at
least if it is prolonged; I have one winter storage apple (wild on the farm)
that seems to be okay down to 27 or so. The determining factor is probably
whether the fruit froze hard enough to break the cell walls. Once they are
broken, the fruit won't keep long at all. Good luck.Muffy Barrett

As noted, the temp apples can tolerate varies- I believe relative brix is
the largest factor which can be affected by variety, weather, soil, pruning
etc. but especially variety. I've seen Goldrush (very high brix) hold its
crunch here well into Dec after temps below 24 F.. I've never seen any
variety damaged by temps in the 30's at all. Sugar in fruit should prevent
it from freezing at temps water would. Purdue recommends storing them
between 30 and 32 and other sources usually suggest storing at around 32
with no warning about temps dipping a bit below that. If a fridge is set
at 32 there will be quite a bit of fluctuation between high and low, I
expect.

Given that it is standard procedure for certain varieties to be kept on the
trees into Nov in the Hudson Valley, I think it's safe to say that many if
not most varieties won't be damaged above 26 or so, at least as long as
temps are climbing up into the 50's during the day.
