Ginda,
The typical time to cut scion wood ranges from mid February to earliest
April, depending on weather, climate and dormancy of the trees. It's most
important the tree is dormant when you cut the twigs. Too close to bud
swelling and your odds for successful grafts drop quickly. 
If these trees bud early, you need to act late in winter. If really late,
like Stoke Red or Court Pendu Plat, you have a larger window of opportunity. 

When in doubt, err a bit earlier.

I might add that if you fail at this season, you might try chip bud grafts in
late August. Chip buds are easier than they look.
