Just a caution about bleach:
Mixing it with any acidic solution (such as vineger) will initiate a chemical reaction with the release of Chlorine gas wch is poisonous
I would even be careful about using it indoors to disinfect peatmoss (wch has an acid ph)

I would think that a 10% solution of bleach should be adequate.
I would think that 100% might be harmful.
Might also try 3% H2O2 and/or 99% isopropyl (rubbing) alcohol
I believe that baking soda also has some fungicidal properties.

Chestnuts freeze at about -3C to -4C so I refrigerate them at -0C to -1C and they hold up well.  I first cool them down in mesh bags to allow the condensation to evaporate and them place them into plastic bags, poking some holes in the plastic bags to allow some air exchange since they will still use up oxygen due to transpiration.  Elevated CO2 levels helps reduce mold but excessive levels will create an off flavor and O2 levels below 4% will kill the nut embryo, and the nut will then degrade.
