I'm not sure of the exact species, except the description of black cherry exactly coincides with what are called black cherry here, except for the size. The black cherries here are very sweet, slightly bitter and have a thin layer of pulp over the pit. Except they are about the size of a ripe elderberry. Very tiny fruit. I have often thought how nice it would be to breed a large cherry with them to perhaps get a standard size cherry with a very tiny pit.
The problem is that it's hard to find many other prunus that will live in coastal Louisiana. Ecuadoran cherry, mexican plum and just maybe the ultra low-chill cherry varieties produced by the University of California. All of these would be experimental plantings, since, to my knowledge no one has ever tried any of them here.
Maybe next year. . .

I'm not a wine maker, but enjopy it. Years ago I heard someone saying that the wild black cherry makes a wonderful wine.  You might try that. collecting enough to make wine would be a task.
