I have picked most of my apples from those that are bearing - 2-3 weeks earlier that what could be deemed normal. I planted a Keepsake based upon recomendations from several NAFEX'ers who claimed it to be among the best. It has 7 gorgeous looking, fully red apples that are as hard as rocks and I assume 'not ready'. Last year, I picked 3 from this tree that I assumed were ready - based upon colour - only to discover it needed more time.

Is Keepsake one of those that is considered late, and does it require a storage time to mature properly?
