Been making a great robust wine from Aronia for a few years. With the right yeast & attention most of the astringency disappears after the wine mellows for a year or so. If yr berries are dry I wonder if you waited too long. In WI, I harvested them almost a month ago already.

Don't know how this (Autumn Magic fruit) compares to Nero, but I harvest but do not process the fruit. Along with Autumn Olive, fall nibble foods.
