I wouldn't worry about drying out too much. The chestnuts that I've
grown from seed sprouted extremey rapidly with good roots right away.
Give it some water at planting time, and they'll probably be fine.
Rodents are the biggest problem.

If you don't mind transplanting them, one method for stone fruit and
paw paws that's worked really well for me is to pick a compost pile
that's almost decomposed and ready to go into the garden. My piles are
about 3x3 ft by 18 inches high once they're done. I plant the pits or
seeds about an inch or two into the compost, and protect it somehow so
the chickens or squirrels don't disturb them. The advantages for me
are that I can plant a lot in a small area and it's easy to protect
while germinating. The best part though is the gigantic root system I
get. I've had much more luck transplanting these monsters than the
little guys I used to grow in small pots than into large pots. Because
of the rich soil, the plant gets huge and really sturdy very quickly,
and seems to recover very quickly from being transplanted, even in the
middle of the summer. Just for example, last summer, the apricots in
the compost pile were 2 foot high and multiple branched with an equal
root system, after just 8 weeks. Compared to probably 6 inches the
normal way I would grow them.
