John, I suggest that you think about adding organic material, maybe give it some leaf mulch.

I'm assuming that eventually the main tuber will get large enough to start producing many additional tubers. The selection I have apparently produces large tubers but is slow to create new ones. If memory is correct, our lowest temp here during the time I have had this has been -17. I've also looked for this in the wild in this area, but so far have not found it.
