I planted Apios americana probably 20 years ago, from seeds I got from LSU. I did eat some of the tubers then found that it was getting a bit weedy. I'm in the colder part of Zone 5, and the tubers have survived to below minus 25 degrees F.

Nowadays, the bed where I planted it is a flower bed and I just try, unsuccessfully, to weed it out. Occasionally I'll search for some tubers but haven't found any, probably because there's a lot of competition for light and nutrients in that bed.

Very occasionally the plant produces some very fragrant flowers.

I am growing a LSU selection obtained from Edible Landscaping about 6 years ago.  So far, no significant problems here is Zone 5 pushing towards Zone 6.  The first few years, it did not grow much and almost died, so I dug it up, potted it and moved to an area that gets less direct sun and more steady moisture.  The last two years have seen healthier more vigorous vines with much larger vine growth last summer.  With all the discussion going on, I dug it up yesterday to take a look.  The primary tuber was about 4" x 3" and noticeably larger than last year.  There was also 1 new tuber, about 1" in diameter.  So out of 6 years of growing it, I now have a second tuber.  I divided the new tuber from the main one and planted it.

I'm assuming that eventually the main tuber will get large enough to start producing many additional tubers.  The selection I have apparently produces large tubers but is slow to create new ones.  If memory is correct, our lowest temp here during the time I have had this has been -17.  I've also looked for this in the wild in this area, but so far have not found it.

Anyone have anecdotal evidence that the Louisiana cultivars are hardy to the Upper Midwest.  I'm seeing -20 in the descriptor below which wouldn't make it where I'm living.

Originally bred in Louisiana this selection is tops in tuber size. Nuts average 3 to 5 inches in diameter and have a very smooth light skin. Vines can grow up to 50 ft. or more in a single season so trellising would be of benefit. In our greenhouse vines in July were putting on 1 ft. of growth per day. Possibly a good commercial selection and will probably end up in your local supermarket someday soon. Completely hardy and productive in southern Michigan. Available again starting in the fall of 2010.

Hardiness -20 °F.
