Ideally scionwood should come from growth which was in mostly sun. Are these
watersprouts growing into a leafy canopy which has kept them mostly shaded?
Go find vertical growth in full sun if possible.
If the watersprouts are shaded but the best scions available from a dying
tree of a rare variety or chance seedling, then that's what you'll have to
use.
Is it possible the watersprouts are growing from below a graft which would
make their fruit different from the upper/ fruiting part of the tree? Again,
try to get the higher scionwood from upper part of tree.
Be careful climbing, & have fun grafting.
