Those temperature swings you are experiencing are pretty common in the front
range of Colorado and high elevation New Mexico. There isn't much I know of
to do that is feasible for a long period of time after planting. Before
planting it is about location either near water or in areas that are shaded
through March or so, and also about plant and variety choice. Apricots and
hardy Kiwi's sweet cherries and Japanese plums are more challenging due to a
general tendency toward early bloom. Mulberry jujube and american persimmon
generally don't have bloom issues, they are consistently later, as for many
of the rest it is variety choice go for the high chill late bloomers or ones
with frost tolerant flowers.
