Crab apples enhance the taste of both sweet and hard cider.
The rule of thumb is that 10% of the total apple mixture may
be crab apples. During the 19th century, many cider companies
sold crab apple cider as a varietal cider.
There are several larger crab apple varieties that are easy
grow - Hewes (Thomas Jefferson's favorite), Ralph Shay,
Wickson, Soulard, etc.
Try some crab apples in your next blend of cider or perry.
