I have two asian pears that I grafted 5 years ago. Both are bearing fruit for the first time. I don't remember their names off the top of my head. Fortunately I have the names recorded in my garden file, so I can look those name up if I need to. They are planted a few feet apart, the fruit has the same color and size. There is a subtle difference in shape that you see only when you hold them side by side. One is terrible - hard, sour and no perfume. The other is at its peak right now - watery crunch, very sweet and grape kool-aid essence. I have been picking the good one for over 2 weeks. The "bad" one will turn into a good one in another week or two.
My advice with asian pears is this - if you don't like it today, come back in a week or two and try it again.

Currently picking asian pears, green gage plums, blackberries, and fall raspberries. I'm nibbling grapes, but they will have more sugar if I wait longer.

Most Asians are mild flavored, but a few can be highly flavored.  Chojuro and Koyama are two with a very distinct, fruity character.  I've had some that were as intensely perfumed as quince.  Sadly, that last type was an unknown that no longer exists.  It was part of a rootstock trial and was actually a variety bred as a rootstock.   It was a cross between a Japanese variety and another species.  Fruits of the selection were as big as a regular Asian pear, but with an amazingly long stem.  I went back for scions, but the tree had been pulled and there wasn't any more of it.
