I'm about a thousand miles too far north for citrus, but I'm sure it will behave the same as other fruits in this respect.

If you graft buds from you future young seedlings onto a mature tree, those grafts might start producing a few fruits in a couple of years. If you were to wait for your young seedlings to mature and fruit, well I don't know how long citrus would take but it would certainly be a lot longer. Tag your seedlings and the grafts so that you can pull up any seedlings that prove to be losers.
