Murph,
Freeze your elderberry heads in large, tough plastic bags. Remove from freezer and beat the 'crap' out of them. Then remove stems. Using a white bag works best - black bags don't allow light in so removing stems is difficult.

Also; is there a better way to de-stem Elderberries than fingers ?
The table fork I chose kept jamming...???
Today I picked 21 cups, really quick, off one bush clump.
