The reason sumac doesn't rot is that it's pretty dry to start with, not much to it besides a seed, a papery coat, and a coating of malic acid crystals. I know what Jim means though, about the fruit keeping. If the weather is dry, the fruit keeps perfectly well out on the trees for lemonade making any time. The malic acid is good for aches and pains, but there really isn't much in the way of calories/ food value to be had unless you could break down the seeds. Donna
