Do you use pectic enzyme in your elderberry must?

If not, is that your solution to elderberry goo?

My experience has been different. I've never used anything other than the fruit itself & still I got the goo when I used whole berries in the primary. Like I said previously, my observations have told me that ripeness directly affects the amount of goo & the process of juicing seems to reduce to a minimum.

& to answer Bert's question from yesterday. There are a number of different brands out there but they all are all natural, biodegradable, environmentally safe, non-water soluble organic citrus based solvent cleaner and degreaser. For people growing under organic certification they are indispensible for some hard to clean situations since I believe bleach is not permitted.

& Bert, that's a tremendous collection of grapes that you available on your website, I wish you were located on the other side of the border.

Bert,

I believe you are correct in that 'Elderberry goo' comes from the stems,

not the berries. When we process Elderberries, I put the harvested umbels

into plastic bags and keep them in the freezer until thoroughly frozen.

When I extract them from the freezer, I beat them (in the bag) which removes

berries from stems. In this way, we minimize the amount of stems that get

cooked along with the berries, thereby minimizing the messy goo.

I have never had this elderberry goo.

I strip all berries from the 'umbrellas' with a fork- thus no stem material.

Stem material may be the problem

Elderberry wine blended say 15% by volume enhances 'kit' Cab Sav wine.

Asippin on a glass right now.

Miekal, what is a citrus cleaner? Cheers Bert
