Manhart is good...Perhaps a more accessible reference is last year's
Brooklyn Botanical Garden publication to which NAFEX's Ed Fackler and
Tom Burford contributed: The Best Apples to Buy and Grow. Just over a
hundred pages, excellent photos and some cultural information as well as
descriptions. Tom Burford's Apples: A Catalog of International
Varieties remains probably the best encyclopedia for older varieties
grown in this country--he has something over 400 I believe. Our efforts
have been largely inspired by his work and the descriptions of the 200
or so we grow owe a great deal to this last reference and are used with
his permission. We will be expanding these descriptions and discussions
as we update with our experiences here in central Virginia.
It is not too soon to encourage anyone interested in this and other
topics to plan on attending the outstanding program Ed Fackler has put
together for the NAFEX annual meeting in Kentucky this summer. See
www.nafex.org for details.
Finally, Karmijan is a wonderfully and dramatically flavored apple but
hardly overshadows or exceeds Ashmead's Kernel which is a bit more
complex, I would assert, and Roxbury Russet, perhaps not as tart...If an
older variety is desired, there are others such as Tompkins County King,
Stayman, Esopus Spitzenburg and my personal favorite, the Albemarle
Pippin (aka Newtown). And on and on.

I went looking for this book and came across some interesting
information
for those who like apples.
http://www.tree-mendus.com/articles/a_walk_thru.html
excerpt: Manhart says, "biting into a crisp Karmijn" will cause you to
"come
up out of your chair", very rich, juicy and "one of the best liked of
high
flavored apples".
