A number of years ago I came across an article that may be of interest. I think I may have gotten the article from the NAFEX library, and I believe it was from the Journal of the Royal Horticultural Society. The topic was fall color in pears. One thing to keep in mind that fall color may not develop the same way in the continental US as it does in England.

Hi Tanis,

I saw this here too - zone 4a Central MN - like never before. Color on all
the Prunus and Pyrus, even the peaches which have always had the leaves
freeze off green. We didn't have a hard killing frost until mid Nov, and
usually get one in early Oct. And yes, the apples hung on green until the
freeze and then slid into their usual muddy brown for a few days and fell.

This year I noticed a range of fall leaf color in pear varieties.  Here
(s.central WI, light soil, very droughty year), the best color was on my
Petit Muscat and on an unID'd tree a couple miles down the road.  Does
anyone else notice this, and if so, which varieties?  Can we get
homeowners
to plant more pears if we can sing the praises of fall color?

Sorry, didn't notice nice color on any apple leaves.
