Here's a related outburst about Orchard Yield ...............
 
Orchard Yield is something the owner designs, slowly and carefully.
All standard size trees, as you plan, can get to be huge.
 
There may be some good place to get Yield 'estimates' for various fruits.
For a 'ballpark' feel, read The Back Yard Orchardist by Stella Otto.
Also read Growing Fruit in the Upper Midwest by Don Gordon.
I still refer to both once in a while. You might buy them, actually.
 
Even if you learn & do it all right, there will still be bad years; illness, weather, plant ailments, money....
One year in 4 may not go too well. Oh well...
As long as you plan that in, it shouldn't stop you from having a wonderful time.
