Probably NOT M.nigra, if the fruits are bland.
Color of the fruit has no bearing on species - this is a common
misconception; white fruit doesn't necessarily mean it's M.alba, red fruit
M.rubra, black fruit M.nigra, etc.
Fruits produced by M.alba trees will run the range from green/white to
lavendar to black, and the range of flavors will also run from
insipid/'grassy' to sweet to tart. Gordon Nofs had one that he sent me years
ago that he swore tasted like muskmelon when ripe.
Fruits of M.nigra and M.rubra typically end up going from green to red to
black, and while I've not yet had a chance to sample M.nigra, I've not yet
come across a M.rubra that I didn't like.
Maybe I've not encountered the good one, but I've yet to sample a
white-fruited mulberry that was much more than just a little sweet; I don't
care for them, but maybe if you dried 'em, they'd be better. One thing about
the green/white ones - they're typically not as attractive to the birds -
maybe they don't see them?
