Title: Re: [NAFEX] fruit wines One useful tool from wine art stores is pectinase. This enzyme breaks down pectins in the fruit, allowing better release of juice, and really makes a difference in how well the wine clears. That can make a world of difference with fruits like plums and apricots.

Now and again over 40 years, I have made fruit wines . The best was with Damson plums,
The deep purple color and great taste reminded me of the Petite Sirrah we also made from grapes. I used regular wine yeast that you can get from stores like " Wine Art" that sell wine making equipment & supplies ( see yellow pages).. Recipes are also available from such sources Dale, Colorado
