I would describe it more as pulling the scion away from you while holding the knife in place than pulling the knife towards you. Much safer!

I have just received my grafting knife (victorinox).used to change other email options):
It has a single bevel on the right of the edge (if
you hold the knife with the bevel side up, the edge
is on the left).
The natural way I'm holding this is with the knife
in my right and the wood in my left (I'm right
handed), pushing away from myself to cut, and that
leaves the beveled edge next to the wood. It doesn't
seem right. Am I holding the knife/wood wrong, is
it a left-handed knife, or is the bevel next to the
wood actually correct?
Though even with the bevel, my (practice) cuts are a
lot better than with the razor...
