Also remember that the palate changes over time. Whether the palate just
becomes less sensitive with age, or
over time taste buds die off (to some degree) it does change, and feelings
change regarding what is good.

A young child may spit out onions, only to enjoy them as a teenager. I have
seen this in my own children.

"As babies, we have thousands of taste buds on our tongues as well as on the
sides and roof of the mouth. It's
why we were very sensitive to different foods. As we age, the taste buds
begin to disappear from the sides and
roof of the mouth, leaving taste buds mostly on our tongue. The remaining
taste buds eventually become less
sensitive."

So as you age, flavors that were too intense may become quite pleasant, and
smaller nuance can be lost.

Always go back and re-taste fruit with aquired experience.
