I have a friend who grows plum trees for wood carving. They grow relatively fast. Not too difficult to chisel and one great big plus is: He makes mixing spoons with a big hole for use as a mixing whip (my wife loves to use those spoons over regular spoons). With many woods, the end loop of the spoon breaks out but plum has a tight enough grain - with normal use, they last many years.
