Chris,
Gooseberries can be picked in such a way to leave the stem on the plant, for
at least most of them. Depends somewhat on the cultivar and how ripe.
Instead of pulling down relative to the stem, we 'roll' the gooseberry off
of its stem. Yes, this often leaves a big scar for quicker spoilage, but if
the berries will soon be frozen or cooked, no problem.

If you're making a pie w/ gooseberries or
Jostaberries, do you need to remove the stem
and blossom ends?

BTW, for all the negative talk around Jostaberries
I have found them quite productive (if I make sure
I prune to the weakest growing branches) and tasty
if left to darken enough. However I don't believe
them to be as good as Currants.

I don't. If I'm feeling industrious, I'll pull a bag of frozen
gooseberries out of the freezer and roll the bag around between my hands -
a goodly portion of the stems and blossom ends will break off, but I don't
worry too much about 'em - just some additional fiber, and, for the most
part, I end up eating most of the gooseberry confections - they're not a
big hit with the rest of my family.
