Apple Snow
Serves 4-6
6 tart apples
3/4 cup water
2/3 cup sugar
2 egg whites
2 teaspoons sugar
Red currant jelly

Cook apples, pared and sliced, with water and sugar, until tender. Mash
through a fine strainer, and let cool. Beat egg whites until nearly stiff,
add sugar and beat until stiff. Add 1-1/2 cups of the apple pulp and mix
gently until combined. Divide among serving dishes and top each with a
teaspoon of jelly.
