Here is some advice on how to harvest from that webpage...
"Pyracantha berries should not be picked until fully ripe. If you watch the
shrubs closely, one day you will notice the birds eating the berries. That's
when they're ripe....Pyracantha wine has an unusual but not unpleasant
taste. It ages well and smooths out as it matures, both as a dry or
semi-sweet wine." Who needs grapes when you have pyracantha berries?

I used to eat pyracantha berries raw off the bush as a kid. I've been known
to pop a few in my mouth as an adult, too. They are kind of starchy, but
the flavor is much like cranberries, only not as tart. Could you share the
jelly recipe?
