I prefer about a 2- 2 1/2 " blade because it gives a longer slicing -
leveling surface for a cleaner flatter cut. Are you referring to length as
being the principle "danger factor"? Or just that some knives are
flexable?
I reground a bunch of utility knife blades for Bob's class ( to have a
single bevel), they end up with a useful length of about 1". I
could regrind a stack of the blades for the conference, would make a cheap
grating knife.

My date for the Nafex conference in Minneapolis is Sept 12-14
