This was passed to me by one of the best horticulturists in the nation:

You can pass on to the group that 2+ trees in a hole is an effective way to
increase the number of varieties and in species/varieties that require cross
pollination, it can make the process more feasible(if compatibility is
worked out). The latter part of the problem is easily remedied by grafting
multiple varieties on one or two trees, especially for easily propagated
species like pear and apple.

The second part of the equation is that less total production per tree is
produced, but who needs 2-4 bushels in a family situation? And, there
should be no problem with water or nutrients if normal production practices
are used.
