Well, I'm in a similar situation (but I had bought my rootstocks as
rootstocks). You could consider grafting the varieties of peach that
you want on to the existing trees. This doesn't help you use up your
harvest this year, but give you better quality in the years going out
from this...

(I should mention that I haven't had any success grafting
peaches...yet)
