Hello,

Just made currant juice concentrate and bottled it.

6 quart dutch oven

3 liters of fruit
cover with water
simmer lightly till pulp separates from seeds
remove from heat and mash berries with potato masher
Bring to a boil
sieve/filter pulp from juice (your choice of technique)
For each 4 cups of sieved juice add 1 cup of sugar
Bring to a boil and boil for 15-20 minutes
pour into bottles and seal

When ready to use, add water, gingerale, etc. to taste.

The above recipe is for grapes, I doubled the water for currants as they
are much stronger in flavor.

During the winter I buy bottled tomato juice, and re-use the bottles for
canning juice concentrate I make in the summer. You can re-use a glass
bottle a couple of times with no problem, as long as the lid/seal are
good. A bottle that does not seal can be used right away, or re-boiled
and put in another bottle. (easy smeasy)

You could also freeze the juice in washed plastic pop bottles. (leave a
good air space for ice expansion).
