The factor that most has impressed me about the fillet knife (fishing
knife) I use for grafting is that it holds an edge for a long, long
time, I've only sharpened it twice in years of {albeit light} use.
I want to thank you all for the incredibly wonderful amount of info
on stainless steel and no, it wasn't "more than I wanted to know".
And I'm so glad to learn that, apparently, my pots are just fine, and
might even be a higher quality product. If so, they're a good deal at
Lechters, very thin metal but only about 20 dollars for a 16 qt pot.
