A local maple producer had a person repeated stealing. He put video in. Sheriff took them to court. Personally, I would probably just try to embarass them, let them know we know, and then if it didn't stop...
Some folks would consider self-serve an invitation to steal, so I don't know how far judicially we could take it.
And if it was a camera where I could be notified when folks come in, and talk to them, they would know they are being watched. I might even remind them as they walked out where the pay box is.

We do not charge. We group together clients and have two primary delivery
days: Monday and Thursday. THis way we group everyone together. We drop of
a single one pound order of micros at a tiny vegan place and then a large
order at a national hotel chain. On Thursday we make a minimum of six drops
and sometimes as many as 15.
If you want a delivery on other days we simply set a minimum purchase amount.
Example: 100.00 within 10 miles. 140.00 between 10 and 15 and so on.
We have found that we are not competing against other farmers. We are all
competing against Sysco and U.S. Foods. Make it simple for your client. Do
not charge a delivery fee.

Similar here. I only service two small restaurants in a nearby town,
and I currently do not charge. Starting next year, if/when I get to set
up an actual delivery route with more accounts, there will be a minimum
order amount for the delivery (I'm thinking 50$), with 4% discount for
order over 100$, and 10% for order over 200$.

For years folks told me I had a great location for a farmstand, but we
didn't do it because I thought the demographics of our drive-bys was poor
(village that folks would be coming from has high crime rate). We went
ahead and put up a farmstand this year, making it self-serve. We are losing
close to 50%.
The farmstand does not have electricity or cable, but we do now have cell
service. Anyone know of a camera system that would work in those
conditions. Needs to be motion-activated. Could be as "simple" as something
that saves to a media card (which is what the ones I've found that don't
require cable hookup do), and I would check after the fact to see who didn't
pay, to something that would link to my cell phone and I could talk to folks
(and see them???) when they come in. Thinking have one by the cash box and
one aimed at license plates.
