In my experience here, fruit set in cold condition on beans (Jade, Gold
Rush) produce a lot of malformed beans. This makes picking quite
unproductive and really not worth my time any more. However, the taste
do improve a lot in cold conditions (particularly so for Jade, which was
rather strong tasting in the summer). You may want to try for yourself
nonetheless, as your condition are surely different from mine.

Sorry, I have no idea about the pollination part.
