Hey Alicia,
It has been suggested to me to grow sweet potatoes under plastic mulch with a tunnel over the plants for our climate. I wonder if that layer of warm air over a solarization film would work for you, especially to keep air temps from dropping to 40 degrees like last night. I know you are concerned about the soil temp, but a warm insulation layer over the ground plastic should help a bunch.
