If you are buying plants, you may be stuck with whatever variety you can find, mostly likely Roma (a specific variety). You may also find San Marzano, also used for canning and sauces. Our favorite is Juliet, which can be used for sauce, but also fresh in salads and sandwiches. My experience with Roma or San Marzano is they are too pulpy for fresh use.
